The Clover Club
The Clover Club cocktail, as elegant as it looks! This refreshing cocktail is the perfect to kick off any evening in style.
50ml The Barracks Gin
10ml Dry Vermouth
5ml Raspberry Syrup
10ml Fresh Lemon Juice
1 Egg White
1 Raspberry or lemon peel, for garnish
Place all ingredients in cocktail shaker and shake well. Top up shaker with ice cubes and shale again, until outside of shaker feel cold to touch. Strain into a coupe glass and garnish.
This pre-Prohibition cocktail was created in Philadelphia, US, at the Bellevue-Startford Hotel. During the late 19th century, the hotel hosted the Clover Club, a gentleman’s club of writers and lawyers whose membership included poet William Butler Yates. The first recorded recipe appears in Tom Bullock’s The ideal Bartender from 1917. Following Prohibition, the cocktail lost popularity, as it was considered a particularly feminine drink. However, the Clover Club’s fortunes were revived by bartender Julie Reiner who opened a bar in Brooklyn named after the drink in 2009, putting the cocktail as the signature on her menu.
