Gin & Apple Tarte Tatin
A great sweet treat to get you through those cold winter nights! Very easy to make and totally worth trying for that wonderful gin kick.
Ingredients:
375g Frozen butter puff pastry, thawed
150g Caster sugar
125ml Gin
1 Vanilla bean, split, seeds scraped
1 1/2 tsp Juniper berries
3 Granny Smith apples, peeled, cores removed, quartered
50g Unsalted butter
Vanilla ice cream
Method:
1. Preheat oven to 180°C. Cut pastry into a 24cm diameter round.
2. Place sugar, gin, vanilla pod and seeds, and juniper berries in a 22cm ovenproof frying pan over medium heat, stirring to dissolve sugar. Cook for 3-4 minutes or until light golden, then add apples, core-side facing up, and cook for 1-2 minutes or until light golden. Add butter and remove from heat.
3. Lay pastry over apples, using a metal tongs or fork carefully tuck in edges. Bake for 20 minutes or until pastry is golden and crisp.
4. Invert onto a serving plate while still hot and serve with Vanilla ice cream.
