A great way to impress guests at your next dinner party, or even casual weekend afternoon drinks! These tasty little treats go well with any gin cocktail or martini.
4 tablespoons of olive oil
3 garlic cloves, cut in vertical halves
1 teaspoon black peppercorns
2 tablespoons citrus peels
3 tablespoons gin
½ cup green olives
Fresh rosemary or thyme
Add olive oil to a small saucepan. Add garlic and bring to medium heat. Sauté to release on low-medium heat being careful not to brown the garlic.
Stir in peppercorns, citrus peels and herbs. Continue to cook for two minutes.
Add the gin and olives. Stir to coat the olives with everything in the saucepan. Cook for 7 to 8 minutes, stirring occasionally.
Remove the olives from the heat and let sit for at least 15 minutes. Serve warm with your favourite gin cocktail.
