Gin Sauté Shrimp
Traditionally cooked with white wine, shrimp cooked with gin adds a delicate botanical infusion to this classic dish. Serve with warm crunchy bread to make a fantastic simple meal for any season.
Ingredients
2 tablespoons olive oil
2 tablespoons butter
4 garlic cloves (crushed)
Thumb-sized piece of fresh ginger (crushed)
60ml Gin
1 red chilli
A dozen fresh large shrimp, peeled and cleaned
Juice from ½ lemon
Small bunch of finely chopped fresh parsley
In a large frying pan, heat the oil and butter over medium high heat. Be careful not to burn the butter. Add garlic, ginger, chili, and stir to prevent the garlic from turning brown. Reduce the heat if necessary. Cook for 2-3 minutes on medium heat.
Add the gin and allow the alcohol to cook off (2 minutes). Add the shrimp, lemon juice and sauté for 5-6 minutes. Season with salt and pepper. Finish with chopped parsley and serve with toasted crostini.
